Mother Shaakambhari
The Vedas were captured by a demon Ruru through a boon from Brahma and there were no yajnas on earth.. This resulted in draught and famine for many years. The sages did penance and propitiated Paravathi the Mahatripurasundari.
And She manifested Herself as Shatakshi or the Lady with hundred eyes and looked at the world. When She saw the misery of the living beings, torrents of tears flowed from those eyes and such tears filled the earth and the rivers..
And therefore the vegetation on earth was rejuvenated..
Further, in her extreme mercy Parvathi manifested Herself with eight hands which held all vegetables, corns, cereals etc..
And the people on earth ate from her hands and survived and thrived.
As She manifested with Vegetables in her hands, Parvathy the Durga was praised by all as Shakambari.
